Ingredients

  • 1 cup jasmine rice
  • 1¼ cups water
  • 1 tablespoon butter
  • ½ teaspoon salt
  • Zest of 1 lime
  • Juice of 1 lime (2tablespoons)
  • 2-3 tablespoons cilantro, chopped

 Directions

  1. Measure the rice, then rinse under cold water until it runs mostly clear. Add rice, water, butter, and salt to the inner pot.
  2. Close the lid and select White Rice, then Start. The cooker will automatically steam. Allow the cooker to complete its cycle.
  3. When cooking finishes, the rice cooker will automatically turn to Warm. Let the rice sit for 5 minutes on Warm (with the lid closed) to finish steaming.
  4. Open the lid carefully, and add the lime zest, lime juice, and cilantro. Fluff gently with a fork until everything is well combined.
  5. Taste and adjust. Add more lime, cilantro, or salt as desired Serve warm.

** For a stronger citrus flavor, add an extra tablespoon of lime juice after fluffing.
** Dried cilantro works in a pinch; use 1-1½ teaspoons.
