Hainan Chicken & Rice

INGREDIENTS
- Soy sauce: 2T
- Lime juice: 2T
- Chopped garlic: 2T
- Chopped ginger: 1T
- Sliced onion: 1/4c
- Chopped serrano chile: 2T
- White sugar: 1t
- Sesame oil: 1 teaspoon
- Low sodium chicken stock: 3c
- Quartered chicken thigh & leg: 2 pieces
- Long grain rice: 2c
- Chopped garlic: 3T
- Chopped ginger: 1T
INSTRUCTIONS
- Place rice, garlic, ginger, and stock into the pot and stir together.
- Then place chicken on top of rice and set cooker to [RICE] for 50min.
- To make the sauce place soy, lime juice, garlic, ginger, chile, and sugar and sesame oil into the bowl and mix together.
- Once rice/ chicken is complete, spoon rice on to plate and place chicken on top of rice.
- Spoon on sauce mixture and enjoy.
