San Francisco Cioppino

A seafood stew packed with layers of seafood, spices, and vegetables, make this unbelievably tasty given the short prep time.

Ingredients

  • Olive oil: 2T
  • Chopped onion: 1c
  • Black pepper: 1T
  • Red wine: 1/4c
  • Can crushed tomato: 2c
  • Chopped garlic: 2T
  • Oregano: 1 teaspoon
  • Fresh chopped parsley: 1/4c
  • Lemon: 1 piece
  • Celery: 1/4c
  • Tomato paste: 2T
  • Mussels: 1/4lb
  • Scallops: 1/4lb
  • Shrimp: 1/4lb
  • Crab: 1/4lb
  • Whitefish: 1/4lb
  • Vegetable stock: 1/2c
  • Salt: 1T

Directions

  1. Set cooker to [BROWNING FRY level.#4] and place oil, onion, garlic, celery and lightly Sautée. [approx..4min]
  2. Once cooked add tomato, oregano, tomato paste, salt, and vegetable stock to pot then set to [MULTI COOK] for 20min.
  3. Once finished place all seafood into the pot and set cooker to [MULTI COOK] again for another 20min.
  4. Once finished spoon seafood and soup into a bowl and garnish with parsley and freshly squeezed lemon juice. This dish is perfect with some nice crusty bread to dip!

Notes
